docs: Fix images used in Query data docs (#7443)

### Describe Your Changes

This is a follow up for #7435. Images need to be updated too:

-   The time is changed from 10 hrs to 08 hrs
-   A missing data point is added to the range query image
-   Source escalidraw has been updated as well
